Bacon Wrapped Pork Chops

These are painfully simple once you get the wrapped part under control.   Step by step photos with descriptions are HERE

Basically, get a packet of thin sliced pork chops, some bacon, garlic, and a raspberry chipotle sauce.. spread a bit of the garlic and sauce on each chop, then roll them up, wrap them in bacon, and broil them for almost 20 min.  Packing them together, leaves them moister, but the bacon doesn’t get as crispy.  Flipping them can solve some of that.. but not packing them together seems to result in the most delectable bacon wrapped pork chop bits.  This method also makes it easier to fit pork chops into bento boxes, which is always an upside.

For the asparagus:  Chop up half an onion, and a red bell pepper.. and in a sauce pan saute them in a tablespoon of olive oil until they just start to show browns, stir them really well (add salt/pepper to taste) toss some asparagus in on top, put the lid on, and pull them from the heat.  The steam from the still cooking onion and pepper will flavor the asparagus while it cooks.  And then it won’t be all soggy \o/          soggy asparagus = sad panda

(green beans are awesome this way too, and if you happen to add a few tablespoons of juice from the pork chop pan instead of the oil.. I won’t tell anyone. =^.^= )
